Now that my Christmas menu has expanded to cater to a variety of food allergies, I’m always keen to test out new free-from products. With the big day around the corner, Delicious Alchemy’s gluten-free Christmas cake mix couldn’t have arrived (to my desk) at a better time. I was pleased to see just how easy the recipe method appeared to be – it was just begging to be tested.
The mix itself is made with all the wonderful things that a Christmas cake should have – sultanas, dates, raisins – only instead of plain flour, it contains rice flour. I opened the festive bag the mix came in and the scent of Christmas simply poured out… sigh.
The cake takes no time to throw together. Besides the actual cake mix you’ll need a couple of eggs, 110g butter or dairy-free alternative, 75ml brandy or orange juice (I went with orange juice) and the optional zest of an orange .
As my home filled with the scent of Christmassy spices my anticipation (and expectation) of the cake grew.
I wasn’t disappointed. The cake was moist, fruity and warming thanks to all those lovely spices.
This is a great dessert to whip up if you have someone in your family with a gluten allergy and it’s also a perfect gift as it comes in an attractive carrier box
