How to make your own salad dressings

Q: I prefer to make my own salad dressings, but I don’t like the vinegary taste of many recipes. Do you have any suggestions for ways to perk up salads without
using vinegar?

Citrus fruits are the obvious choice if you want to add tang to your salads. I often use lemon, lime, orange or even grapefruit zest and juice, especially with prawns, tuna or salmon. Mix in some chopped fresh herbs for extra flavour. And, for an Asian twist, try mixing lime juice, a little sweet chilli sauce and a dash of reduced-salt soy sauce work. Or, if you prefer a creamier dressing, mix low-fat natural yogurt with mustard to taste and some chopped fresh parsley or chives.
